jupyter - visual studio code Jupiter kernel list incomplete and not allowing pointing to path

Question

The Jupyter interpreter list is incomplete and only shows two that I'm not interested in at all (see image). The kernel I'd like to use is a Conda environment that wasn't found by vscode. The python interpreter allows for selecting from a path, but the kernel won't allow it??

Jupyter: Select Interpreter to start Jupyter server doesn't allow entering interpreter path either.
