java - Mongodb and ElasticSearch Sync

Question

I am new to elasticsearch. We have an existing project which uses mongo as DB. currently, we are looking to add elasticsearch for search and aggregating the data.

My question here is, Which one is efficient in below?

1. Adding all document properties of mongo collection to elasticsearch (or)
2. to use mapping(elasticsearch) to restrict unwanted data(properties) to get added(indexed) in elasticsearch?

If 2 is efficient, then In the future if I need to add other properties in the same collection to elastic search, should I need to reindex the elasticsearch to avoid adding default values in elasticsearch?

Or is there any other way to add the remaining properties with values for all the indexed data in elasticsearch?
