eloquent - Dynamic fetching Laravel based on date

Question

I have an order management system website, which uses Laravel and I need to add a function. I have a database and table "orders" which have few columns and two of them are "price" and "date". I want to fetch prices from the database based on the date which is selected by a user. I will show you an example:

This is a Shopify's date picker

This is stats based on a selected date

A very important detail is that when the user chooses a date and then changes it, the webpage is not redirected anywhere, changes are visible immediately.

You can freely suggest to me a structure of the webpage, at this moment I have OrdersController which has its own functionality, I am going to add this feature from scratch and I have not idea how to start
