How does one catch Ctrl+C in C?

With a signal handler.

Here is a simple example flipping a bool used in main():

void intHandler(int dummy) {
    keepRunning = 0;
}

   signal(SIGINT, intHandler);

   while (keepRunning) { 
      // ...
